A Unique Patisserie with Signature Desserts by a French Chef Opens in Madrid

Madrid welcomes autumn with a sweet event — a gastronomic pop-up at Rosewood Villa Magna

An unusual gastronomic project has launched in the Spanish capital. The boutique patisserie Flor y Nata is open temporarily at the Rosewood Villa Magna hotel, offering an exclusive menu. Sweet lovers will have the chance to try signature desserts from the renowned French chef.

Autumn in Madrid began with an unexpected gastronomic discovery. In the very heart of the city, on the prestigious Paseo de la Castellana, the five-star Rosewood Villa Magna hotel set out to surprise locals and guests with a special pop-up project. Its pâtisserie Flor y Nata has, for one month, transformed into a canvas for true dessert artistry.

From September 15 to October 15, visitors can enjoy the creations of Nicolas Rouzaud—one of the most renowned masters of the modern French pastry school. His name is associated with iconic establishments such as Le Bristol Paris and The Connaught Pâtisserie in London. Now, he is presenting in Madrid his own vision of haute pâtisserie, where every detail is meticulously planned and tradition is seamlessly blended with fresh ideas.

The menu features miniature tartlets with seasonal fruits: raspberry, apple, tonka beans, or fig with pine nuts. Each one looks like a small work of art, inspired by jewelry craftsmanship and nature. In addition, guests can sample reimagined classic desserts: Paris-Brest with pistachio, lemon cheesecake, a delicate dessert with pear and vanilla, as well as flan that preserves its authentic texture and flavor.

For those who prefer to enjoy sweets at home, a special takeaway dessert line is available. It includes lemon madeleines, nut financiers, and the chef’s famous cookies—all made from select ingredients.

A special highlight of the program is the signature Afternoon Tea. It includes both sweet and savory treats: croissant with egg and avocado, brioche with salmon, and a mini version of croque-monsieur. A refreshing pre-dessert of apple granita with lime and basil completes the tasting. The cost of this tea experience is €50, or €65 with a glass of Louis Roederer champagne.

This project not only elevates Flor y Nata’s status as one of Madrid’s top destinations for dessert enthusiasts but also puts the city on the international map of high-end pastry trends. A limited-time event that has quickly become a must for anyone seeking new flavors and experiences in the Spanish capital.
